Nothing from my grandmother's garden was ever wasted. This sweet dark pickle is made from the over ripened cucumbers. They are peeled, cored and cooked in brown sugar, vinegar, cinnamon and cloves. Then they are left to soak in this brine overnight. This process is repeated for three day or until they turn the dark color you are looking for. This pickle is not only sweet and delicious to eat as a pickle, but it is also a great addition to any meat recipe such as a ham, pork tenderloin or a roast beef.
