This is a delightful and sophisticated, fat-free dessert topping as well as a finishing glaze for meats and fish. We start with delicious (and antioxidant rich) blueberry juice and incorporate the tang of balsamic vinegar and the sweetness of maple syrup, port wine and brown sugar. We round out the flavor with cardamom and nutmeg for a truly unique flavor. Combined with our Balsamic Vinaigrette, it creates a slightly sweet and tangy salad dressing. For an extraordinary dessert, drizzle over your favorite ice cream, cheesecake, or fruit-based confection (I love it on apple pie with ice cream). As a wonderful glaze for meat, poultry and fish, brush it on during the last quarter of the total cooking time (it is unbelievably good brush on salmon as it grills). For amazing pan sauces, add the glaze to pan juices and reduce.
