This is our flagship product with a truly loyal following. We only use ingredients you would use at home – olive oil, balsamic vinegar, Dijon mustard, fresh garlic and a touch of salt and pepper. The vinaigrette is very versatile – not only does it make the simplest salad special – it also makes a wonderful sautéing sauce for fresh greens, a marinade for fish (our favorite is salmon) and a great dressing for sandwiches – particularly pita pockets or wraps. One of our favorite uses is to make what we call “leftover salads” – put salad greens in a bowl and then go foraging in the refrigerator. Chop up what you find. Add this along with a piece of fruit or some dried cranberries to the greens. Finish the salad with a drizzle of the dressing to bring all of the flavors together.
We hope you will use the dressing to make delicious, healthy meals in less time and with less fuss. And use it sparingly. I know the nutritional label says a serving size is two tablespoons (that’s the industry standard that must be used for labeling purposes) but two tablespoons would overwhelm a typical salad. Just remember, a little goes a long way.
