The flavors of juniper, rosemary, garlic and tamari combine to make this a truly outstanding marinade for almost anything you can roast or grill. With all these wonderful flavors, we have been able to keep the sodium content significantly lower than most commercially available marinades.
Although, this marinade was originally developed for lamb, it works extremely well as a marinade for all forms of meat and poultry (I prefer our Balsamic Vinaigrette for marinating fish). It even transforms the simple hamburger into a gourmet treat. With such a delightful flavor, the marinade can be used as a delicious finishing sauce for steamed vegetables. Try coating a medley of vegetables with the marinade and roasting them in a moderate oven, or use it sparingly as a salad dressing for heartier salads.
